Would a story about be religion be complete without someone supremely good fighting someone supremely evil?

Actually Yes. Good and evil are very much a theme in middle eastern duotheistic religions like Christianity and Zoroastrianism. In many other religions, good and evil simply do not exist, as good and evil do not exist in nature. There is balance and opposing forces, but neither are good or evil, but instead light and dark, creation and destruction.
